Irish Whiskey

Irish Whiskey is a category of wonderful malt whiskies and the Irish may be the oldest distillers of  the malt spirit. They may  well have preceded their Scottish neighbors in the history of the whiskies of the world. Some say that Irish monks venturing to Scotland taught the Scots distillation. There are significant differences though. The Scots use all malted barley  distilled twice in alembic (pot) stills. The Irish use a combination of malted and unmalted barley thrice distilled often in column stills but finer drams ar also pot stilled. It is also required to age three years minimum in oak barrel,longer than Scotch. This makes Irish smoother, lighter and often too easy to drink.
