Winery tasting notes:
COLOR Very intense, dark, deep ruby red.
NOSE The nose is ample and complex with notes of black cherry fruit, leather, and game laced with subtle spice, vanilla, black pepper, and dried flowers.
PALATE The palate shows ripe cherry, well-integrated oak, and spice flavors, with a smooth, silky texture, and layered complexity. Pair with aged cheeses, roasted red meats, and lamb.
85% Carignano (partly pre-phylloxera) & 15% Shiraz Sardinia From Southern Sulcis by the sea.
Up to 100 years old on Calcerous sand. vines manually harvested Mid-September to mid-October 15,000 bottles produced.
Temperature-controlled fermentation in stainless steel. Maceration on the skins lasts for about 14 days. Malolactic fermentation is employed. Aged 12 months in French oak barriques, 12 months, 12 months in the bottle. Alcohol 14.50%ABV, good to cellar up to 20 years
