“Among the cognac qualities the V.S. is the youngest of the cognacs allowed to be sold in bottle after a minimum ageing of 30 months in oak casks. In order to achieve maximum maturity Maison PRUNIER uses oak casks of 400 litres coming only from the Limousin area and with an average age between six and eight years. This V.S. quality is seeking to combine freshness, delicateness and the aromas of the different production areas of the whole region. “The Pineau des Charentes is obtained by blending in oak casks approximately three quarters of volume of grape juice and one quarter of aged cognac. It can be drunk young (2 years). At this stage it is fresh and fruity. It improves with ageing. Traditionally it is drunk before meals; many gastronomes find that its smoothness is a perfect complement to ‘foie gras’ and its sweetness brings out the aromas of certain fruits (melon, strawberries). Its fruit style brings a pleasant freshness to a plate of oysters.” -From Prunier
