“The Pineau des Charentes is obtained by blending in oak casks approximately three quarters of volume of grape juice and one quarter of aged cognac. It can be drunk young (2 years). At this stage it is fresh and fruity. It improves with ageing. Traditionally it is drunk before meals; many gastronomes find that its smoothness is a perfect complement to ‘foie gras’ and its sweetness brings out the aromas of certain fruits (melon, strawberries). Its fruit style brings a pleasant freshness to a plate of oysters.” -From Prunier
