HORSES is a Cabernet Franc Pet Nat (“pétillant naturel”). The first vintage of HORSES sparkling was 2013 and since then, it’s been difficult to keep the wine in stock.
100% destemmed and left on the skins for 24 hours. Gently pressed and fermented cold and slowly throughout harvest. Racked and bottled in early November to finish fermentation in the bottle. Disgorged after 5 months.
Why HORSES? Legend has it that the bluffs at the edge of Macari Vineyards are shaped like a horse’s head. Locals tell tales of the “Horsehead Bluffs”. Also, the Macari family also has two horses that, along with a herd of cows, contribute to their vineyard’s composting program. And, yes, the wine is also a secret tribute to the Patti Smith album, “HORSES”.
