Sparkling Wine – 90% Xinomavro, 10% Assyrtiko
The flagship. Made from un grafted (30-60 year old) vines. Fermented in the bottle using Champagne method. Unfiltered. Razor sharp and very aromatic. Expressive nose of citrus, stone fruits and herbs. Everlasting bubbles. Aged for at least 12 months on the lie. Riddled and disgorged by hand. less than 3 grams per liter dosage
