Wine Spectator 92 points – This is frankly ripe, showing waves of plum and boysenberry compote flavors gliding through, liberally laced with sweet singed vanilla bean and warm anise notes. Very polished in feel, the toast marrying nicely with the showy fruit on the finish. For fans of the style. Drink now through 2026. 81,583 cases made. -JM.February/2019
Caymus Vineyards Napa Valley Cabernet Sauvignon has aromas and flavors which can only be achieved through “hang time” – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to “hang” on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine’s fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla.
We created this wine to be low in tartness yet abundant in tannins, providing impressions of friendly chock richness. The palate enters rich with sweet, ripe tannins, expanding to a greater breadth of refined textures. The flavor profile includes dark chocolate, sweet tobacco, mocha, leather, brown spice, cedar, vanilla and sweet licorice. The primary goodness of this wine is the presence of balance, with a supple texture, approachable grip and a fruit of the earth essence.
