Retsina Kourtaki

Retsina is a traditional Greek wine that has its origins in antiquity. In those far off days wine was stored and transported in the jars and amphorae of the time. The containers were not airtight and therefore the wine soon deteriotated. But, in the course of time, it was found that by sealing the jars with a mixture of plaster and resin the wine remained in a much better condition. This was, of course, the result of preventing the wine from oxidizing in contact with the air. However, the adverse effect which exposure to air had on wine was then unknown, and remained so for many centuries to come, and the ancients in their ignorance attributed the better preservation of wine in sealed continers to the resin. This in turn gave the wine its distinctive flavour.
