"The new wine is barreled in a blend of approximately 80% French and 20% American oak barrels and aged for about a year. Some years we blend in Cabernet Franc to heighten the berry nose of the Cabernet and soften its robust tannins and Merlot to flesh out the mid-palate. The 2003 Covey Run Cabernet Sauvignon is a deeply colored, aromatic wine with a supple mouthfeel and flavors of cherry, berry and spice.
