Chateau Les Vergnes Rouge 2005

WINEMAKING AND MATURING TECHNIQUES:
"From pruning through to picking, the key priority is to control
yields (50 hl/ha). Green harvesting and leaf-stripping are
carried out to help the grapes ripen. Thanks to polyphenol
analysis, the grapes are brought to optimum ripeness. The
wine is made using the traditional Bordeaux method: selected
enzymes and yeast added during the transfer into vats, with
temperature control (30° C max). The maceration time depends on the quality of the tannins that are extracted (10 to 15 days). Pneumatic pressing Matured in vats before bottling. Storage in temperature-controlled cellars for 6 months."

TASTING NOTES:
"Deep crimson with ruby tints. In the nose it is lively and
generous with aromas of red fruit and liquorice. Structured and
rounded on the palate with a long finish revealing lovely mature tannins – mild and silky. Just the wine to be laid down for two or three years to reach its best. Perfect with meat in a sauce, game birds, and cheeses."
