This high-rye version of the Redemption barrel proof bourbon is a much better bourbon whiskey than its lower-rye bourbon counterpart. in this new series. The rye is so prominent here that it reminds me of high-rye mash bill you find in some versions of Four Roses. This is an exhilarating addition to the Redemption portfolio that will hold excitement for both rye whiskey lovers and the barrel proof bourbon fans who enjoy a little spice dancing on their palate.
The Bourbon
Redemption Whiskey is distilled by MGP in Indiana, and bottled in Bardstown, Kentucky, with each batch and bottle number hand-written on every label, detailing the contents.I always appreciate it when a whiskey maker is up front and honest about their sourcing. Enthusiasts all know that MGP makes good whiskey, and Redemption does a great job at blending, bottling and marketing it on.
This barrel proof high-rye Bourbon sports a mash bill of (60% corn, 36% rye, 4% barley) which is similar to what archeologists believe George Washington’s bourbon mash bill was back in 1799. This expression has been aged 9 years in charred new oak barrels, and minimally filtered before being bottled at full proof for our enjoyment at a serious 109.2, or an ABV of 54.6%.
This high rye bourbon has dark copper tone when held up to the light with medium legs clinging to the glass. The nose is encrusted with notes of spice, dried dark fruit, caramel, and the alcohol vapors hold a hint of oak and chocolate.
The palate is full of oak, dark fruits, cinnamon spice, black licorice, chocolate, and a slap of mint and pepper. A drop or two of water opens and further exaggerates all of these flavors. The finish leaves the mouth with dried dark fruit sweetness, remnants of an oak barrel with a pronounced oak spice tingle in the back of the throat, and a touch of caramel, chocolate or cocoa and tobacco.
Overall it has a medium balance, a full body and a bit of an oily mouth feel. It’s a bourbon whiskey with an attitude. Rye fans will enjoy this whiskey as it is, yet some of our bourbon only loving sisters and brothers will want to calm this down a little with a splash of water.

The Bourbon N Rye release is the first edition of straight rye whiskey produced by Pinhook. The traditional mash bill has over 24 months of barrel age on it. It was blended by Sean Josephs at Castle & Key Distillery in Millville, KY.

Vital Stats: The label says Distiller’s Cut is a limited release, unfiltered Kentucky straight bourbon whiskey. It’s bottled at 100 proof, and aged 5-6 years. On the back of the bottle, they clarify that the whiskey is “quality screened to remove barrel char pieces from the liquid,” and that this process “does not change or lessen the flavor in any way.”

Appearance: The whiskey is a bold, copper color, with super-thin legs that make shapes like robust, rolling hills on the side of the glass. It turned cloudy when I added ice cubes.

Nose: Typical bourbon smells of caramel and light, charred oak are apparent, accompanied by other aromas of candied mango or passionfruit.

Palate: Distiller’s Cut has all the flavors that I would expect from a traditional, classic bourbon. It’s got bold flavor and complexity to set it apart from other bourbon whiskey blends. There are traditional notes of caramel, vanilla and charred oak, but added tastes of cinnamon, allspice, chocolate and tropical fruit provide added complexity. The smooth start is followed by slow-building rye spice that intensifies and then quickly dissipates for a sweet, oaky finish.

FLAVOR NOTES

Creamy exotic filberts, trails of tart Granny Smith apple skin, lush saddle leather and minute bursts of campfire charred gingerbread abound in each sip. Light swirls of the wrist offer touches of nutmeg and cardamom, begging the next mouthful. ​

Neat

Appearance: Mahogany veneer leading to motes of shimmering gold leaf melting deeply into the center of the tasting glass. Glistening and clear at the edges, natural fats and oils trail slowly down the glass, each swirl of the glass offers lush prisms of hand polished copper.



Nose: Forest floor of crushed leaves melds into a flaky, lard-spun pie crust laid over homemade mincemeat. Bacon fat and dark brown sugar toasted nuts come into the forefront, along with licks of slow cooked bone broth woven with tangles of sweet and toasty wood smoke.



Palate: Vast slabs of gingerbread toasted over a cast iron pan until just charred, scattered with oven roasted currants and pools of dark Jamaican Rum cream. Each sip of the 107.6 proof heat is beguiling as it rolls over the tongue.



Finish: Split, buttered and griddled diner-style corn muffins slowly give way to richer notes of creamed corn with an undercurrent of cedar shavings. Fire burnished marshmallow crusts are redolent of Café du Monde Beignets sifted with powdered sugar.



With a few drops of spring water

Softly whipped cream spooned over hot, cast iron crisped gingerbread drenched with a zephyr of slowly caramelized shallot and apple butter. Puffs of charred oak smoke offer further ​mystery and intrigue.
