The 1792 Single Barrel Bourbon has a unique flair derived from its high-rye composition, limited-edition single-barrel production, and being a straight bourbon (at least two years old, aged in a new oak barrel). Beyond the original 1792, this is their third limited edition expression of 1792, the other two being Sweet Wheat and Port Finish. 1792 has this to say about their Single Barrel limited edition:
 
A good story is necessary to separate out a small-batch sub-brand like 1792 from its giant distilling parent, the Sazerac Company. 1792 is distilled and bottled by the Barton 1792 Distillery in Bardstown, Kentucky – “Bourbon Capital of the World.” The Barton 1792 Distillery itself was established in 1879 on 196 acres. 1792 Single Barrel edition is 98.6 proof, priced around $40, and available in most states.

NOSE Can an aroma be smooth? Because thats how this one comes across. Dark fruit, caramel, vanilla pudding and oak with light notes of raisins, biscuits and baking spices. This is a different, better, experience compared to the Ridegemont Reserve.
 
PALATE Oak, dark fruit, maple-caramel hybrid, vanilla pudding, pine-like herbal spice, toasted corn and a light biscuity character. It’s a solid flavor and works well with the aroma.
 
FINISH Long slow fade of oak, vanilla, spice and something that reminds me of mixing the caramel and the buttered popcorn in those 3-corn tins that show up around the holidays.
 
BALANCE, BODY & FEEL Decent balance, medium body and a warm slick feel.
 
OVERALL 1792 Small Batch Bourbon is a bit fruitier than a “standard” bourbon and I’m surprised there isn’t more spice for being a “high-rye” bourbon. Regardless it’s still quite nice and represents the full array of “standard” bourbon notes like oak, dark fruit, caramel, vanilla and spice. In a nut-shell it’s a fairly standard bourbon that’s a bit heavy on the sweet notes but still manages a decent balance.

This release was distilled in a small copper pot still at our distillery on San Francisco's Potrero Hill, from a mash of 100% rye malt. Rye was the grain of choice for America's first distillers, and using a mash of 100% rye malt produces a uniquely American whiskey. 'We have found that handmade oak barrels lightly toasted in the traditional manner impart a wonderfully subtle flavor to our 18th-century-style American whiskey. In the 18th century, barrels were made by heating the staves over a fire of oak chips, allowing them to be bent and formed into a barrel shape. FLAVOR NOTES

A vivid honey, raisin and fall fruit flavor with an underlying bed of baking spices is the first impression. Those flavors are quickly followed by a creamy texture with a citrus curd. The finish is long with an elusive combination of almond paste and black pepper.

Appearance: Rose gold with a light copper center.

Nose: An impatient sniff off the freshly opened bottle is rewarded with an incredibly vivid aroma of honey. A delicate balance of spirit-driven dried fruit, including fig, cranberry, apple, and raisin, and oak-driven baking spices of cinnamon and chai tea. This is underpinned by deeper, grain-driven notes of whole wheat sourdough. With time the nose grows sweeter and creamier, with notes of, lime curd, milk chocolate, and amaretto. The fruit grows brighter, evolving into apricot and passion fruit with a touch of green peppercorn.

Palate: The mouth feel is sweet and rounded like a fine calvados but the flavors are lively, almost effervescent. Opens on honey, apricot, white tea, and marigold, with delicately bitter notes of tulsi. This is balanced with soft, crushed almond, maple syrup, and oyster mushroom. Patience is rewarded with warm almond croissant, macadamia nut, nutmeg, and a burst of passion fruit.

Finish: Brings candied cherry, cinnamon, and angostura bitters, like the last sip of a beautifully balanced Manhattan.

With a few drops of spring water

The floral aromas develop further complexity of jasmine flowers, and the fruit jumps out on the palate, introducing muscat grape, trending toward lychee. A strong tobacco note emerges in the finish, making the mouth water for another sip.
