"Junipero Gin is made by hand in the classic 'distilled dry gin' tradition, utilizing more than a dozen botanicals in their natural state, in a small copper pot still at our little distillery on Potrero Hill in San Francisco. The history of gin goes back at least to the mid-1600's in Holland, but its true antecedents are much earlier, those first experiments in the ancient and mysterious art of distilling in the presence of herbs and spices. The predominant flavor and aroma of a modern gin will always come from juniper. But the wonderful challenge for the distiller is in selecting and blending from a wide variety of additional, exotic botanicals in order to impart a uniquely satisfying, balanced character to his gin. At Anchor Distilling we have taken delight in the adventure of researching and experimenting with many such botanicals. Our final formula must remain a secret, but we hope you will agree that we have achieved a distinctive, intriguing complexity in our Junipero Gin: light and crisp and clean, combining a deep and mysterious spiciness Junipero Martini with subtle delicacy." -The Distillery

Barr Hill Tom Cat Reserve is crafted by maturing Barr Hill Gin for three to four months in new American oak casks. “While resting in the barrels, the gin is constantly transforming,” says Todd Hardie, Caledonia Spirits founder. “The charred barrels contribute to the brown color of the spirit and give our Barr Hill Reserve Tom Cat its complex flavor.” Tom Cat Reserve has notes of juniper and ginger, but also has touches of caramel, vanilla and honey that are robust and bountiful. The way we make it is simple: Edinburgh Gin is made in the traditional way by distilling Scottish grain spirit together with juniper and other core gin botanicals in a revered 200 year old pot still in the Black Country. Then it is shipped to Scotland where we add our own distinctive Scottish botanicals in the form of softer, less pungent Scottish juniper that has been macerated in high strength gin as well as heather and milk thistle. No mystery, it's just the way we like to do it. And this method also provides us with a direct link back to the days when Edinburgh and its Port of Leith was a distilling hub not just for whisky, as one would automatically assume but also for distilling and rectifying gin and liqueurs.
