About the Abbazia di Novacella:
"Founded in 1142 this is one of the oldest winery in the world. The Abbey was built in the middle of the vineyards, located between 600 metres above sea level. The moranic nature of the soil is particularly suitable to grow aromatic white grapes like: Sylvaner, Muller Thurgau, Veltiner, Kerner and Gewurztraminer.

Due to the method of planting, Guyot, along with the altitude and continental climate, the production per hectare is limited to 90 quintals. The modern stainless steel equipment of the cellar contrasts with the antiquity of the Abbey but is perfect to store and enhance the typical freshness of these white wines."

After a traditional fermentation, the juice macerates for eight days to extract color and body from the skins. Velvety, harmonious and well balanced with excellent structure. With age it evolves in roundness, fullness and complexity.
